Fennel Salad with Pears and Figs
serves 4
Ingredients
- 1 ea fennel bulb, sliced
- 2 T butter
- 4 ea figs, stemmed and halved
- 4 T olive oil
- 1 T lemon juice
- 1 t lemon juice
- 1 1/2 T mixed parsley, mint, and basil
- white pepper
- 1 ea Anjou pear, quartered, cored, thin slice
- 1 1/4 C feta cheese, crumbled
Instructions
- Brown the figs, cut-side down, in the butter, then remove from heat.
- Whisk together the oil, 1T of lemon juice, and herbs, then season to taste.
- Add the fennel to the dressing and toss to coat, then add the figs, pear, and cheese and toss gently.
- Plate and serve.
